The whole idea is that if you have say twenty keys, the profile.bin file wil have that amount and will overwrite your amount each time you open the chest. The 'save0001' file stores items that are physically carried by the character. The profile.bin file stores all data regarding external storage and items outside of the character's inventory like the vault, claptrap's stash, and golden keys. I am at a loss with finding this file, perhaps I don't have one, but if anyone knows the path to profile.bin for a Mac running Borderlands 2 on Steam, I will be very grateful. That may have been because they had assumed you didn't have the game on Steam. I thought it might be because I'm of my platform, but one website had the path shown to get to the file on Mac as well, and I went to the correct folders, but still, there was no file by that name.
